Cabbage Soup

This soup is from the 7-day detox diet…I figured one doesn’t have to be on that diet to enjoy this healthy, nutritious soup!! I’ve modified it to make it more flavourful, one of the healthiest soups you could have! 🙂

Ingredients

  • 1/2 small cabbage, finely sliced
  • 1 big carrot, cubed
  • 3 fresh tomatoes, chopped
  • 3 onions, chopped
  • 1 big green pepper, chopped into cubes
  • 1/2 tsp. ginger/garlic paste
  • 1 tbsp. oil (or less)
  • salt to taste
  • black pepper to taste
  • 1/4 tsp. turmeric powder
  • 1/4 tsp. cumin powder
  • 1 tbsp. lemon juice
  • 2 green chillies, chopped (you can reduce or omit as per your preference)
  • 1 liter water (approximately)
  • 1 tsp. corn flour mixed in 2 tbsp. water
  • fresh coriander leaves, chopped

Instructions

Heat the oil in a pan, then add the onions and stir-fry them until almost golden. Add the ginger/garlic pastes followed by the carrots and capsicum/green pepper. Fry for a few minutes then add the tomatoes, green chillies and the cabbage. Add the turmeric and cumin powder, and about 1 tsp. black pepper. Then add the water and some salt.

Cover and let this simmer gently for about 20 minutes or until the veggies are tender. Add in the corn flour to help thicken the soup slightly, adjust salt and pepper, then squeeze in the lemon juice and sprinkle some fresh coriander leaves. Stir and turn off the heat. Your soup is ready to serve!
